Simple and Tasty Salad Recipes






Something Summery...






Ingredients

Mixed Leaves
1 x Carrot
1/2 x Pepper
5 x Cherry Tomatoes
Salt
1/2 x Red Pepper
Olive oil
 1x Lemon

Method

You can grab a bag of mixed leaves from any supermarket, they're great for salads like this or throwing into a sandwich or a wrap.

Start by taking two generous handfuls of leaves and washing them under some cold water. Shake off the remaining water droplets and place the leaves in a bowl. Cut the lemon in half and squeeze a small amount of the juice over the leaves.

Peel the carrot and chop off either end. Grate the whole carrot into the bowl. Select 5 plump cherry tomatoes or two large ones and slice them up into small pieces and scatter over the salad. Take your half a pepper and slice into tiny pieces and throw into the bowl.

Take a small jug and add a few drops of water, followed by two teaspoons of olive oil and a pinch of salt and pepper. Squeeze out the juice of the remaining half a lemon and then grate some zest into the mixture. Stir thoroughly until everything is well mixed and then pour generously over the salad.

Bonus tip

If you have any fresh chillies or ginger, slice or grate over the salad for an extra kick.




Cesear Salad




Ingredients

1/2 x Romaine Lettuce
2 x Bacon Rashers
1 x Chicken Breast
1 x Slice of Ciabatta
Parmesan
Light Mayonaise
2 x Lemons
Salt 
Pepper
Fat-Free Yoghurt

Method

Cut the chicken into thin strips, drizzle with olive oil and sprinkle with a generous amount of salt and pepper. Lightly grease a frying pan and throw in the chicken. Grab a lemon and cut it in half, squeeze one half over the chicken & slice the remaining half into discs and place over the slices of chicken. Once the chicken is cooked put on a plate to cool.

Take the two rashers of bacon and place in the pan, cook until crispy and then dice up and place on the plate to cool.

Toast the ciabatta, then lightly cover in olive oil and pepper. Throw in the pan and cook till crispy. Dice up into crouton-sized pieces and place on a plate to cool.

Take the romaine lettuce and wash under cold water and cut in half. Take one half and tear it up into smaller pieces and place in a bowl. Squeeze half a lemon over the lettuce and stir it in. 

Take a small jug and add a few drops of water, a pinch of salt&pepper and some lemon zest. Add 2 teaspoons of yoghurt followed by 5 teaspoons of mayonnaise. Stir till dressing is thoroughly mixed, you want the texture to be creamy yet runny.

Once the chicken and bacon is cold add to the salad bowl. Give the salad a mix and slowly pour the dressing over. Generously sprinkle the diced ciabatta over the salad followed by a light dusting of grated parmesan.


Messy Salad





A messy salad is where you use whatever vegetables you have left to make a salad. 

It doesn't matter too much what you have but more how you use it. 

You need to start with a base, this will make up the large part of your dish. The base can be anything from lettuce to salad leaves. If you don't have anything like this, grate some veg of a similar size to carrots and cucumber lengthways. Place the base in a bowl.

Next, use vegetables like mushrooms, tomatoes or peppers anything you can cut up into small pieces(without having an overpowering flavour) and sprinkle generously over the salad.

If you want to add any cheese, make sure to cut it up into small chunks and scatter over the salad.

Finish with delicately pouring a small amount of olive oil over the vegetables followed by a pinch of salt, pepper and some chilli flakes. If you have a lemon squeeze a small amount over the salad and finito.
